Tasty Tuesday!

This recipe was inspired by one of my favorite meals of my mother's culinary repertoire! She calls it Foil Chicken. I have made some minor tweaks in order to prepare it more easily in my kitchen. Many times she would make Foil Chicken for dinner while we were on one of our family camping trips. She would wrap all the ingredients into aluminum foil and cook it over a fire lit grill. Since I am grilless, I have transformed this savory recipe into Fiesta Pan Chicken! 
Fiesta Pan Chicken!
  • Boneless, skinless chicken breast or strips (I use about 3 strips or one breast for just myself.)
  • Can of black beans
  • Can of yellow corn
  • Diced tomatoes with green chilies (Rotel is my fav brand! They have a spicy kick to them. Or simply use your fav salsa!)
  • Mexican blend cheese 
  • 1/4 Hass avocado
  • 2 tbsp. olive oil
  • Spices: Mrs. Dash Chicken, (or sub your fav poultry seasoning, Mrs. Dash is mine) garlic salt, salt & pepper to taste
  • Dollop of sour cream (optional)
*This recipe is for the amount of food I cook for a single meal for myself. If you wish to make for several guests, use full cans of ingredients and more chicken to accommodate. 

Let's begin the fiesta! 
  1. First heat a medium sized skillet on medium (4 or 5). Add olive oil. (Eye ball desired amount, I figured it's close to 2 tbsp).
  2. When olive oil is heated, add defrosted** chicken to the pan. 
  3. Season chicken on both sides with Mrs. Dash, garlic salt and pepper. Cook thoroughly until no longer raw. **Check inside of chicken with fork if unsure. 
  4. Drain the pan of any excess oil. On top of the chicken, add half can of beans, corn and tomatoes. Should fill the skillet. 
  5. On medium low heat (3) simmer for about 3 or 4 minutes or until ingredients are heated. Season lightly with salt and pepper to taste. 
  6. Add desired amount of cheese. Cover skillet and simmer for about 2 or 3 minutes, until the cheese melts.  
  7. Top with diced avocado and a dollop of sour cream. 
  8. Disfruta de tu fiesta! (Enjoy your fiesta!)

Mouth Watering Monday!

Here's another quick and healthy recipe that will rock your taste buds!



Stuffed Peppers!
  • Whole grain brown rice  
  • Ground turkey (Can also use ground beef but turkey is leaner and less expensive!)
  • Tomato Sauce of choice (I used Classico Tomato Basil)
  • Green Bell Peppers
  • Cheese (I used a mix of 5 white Italian cheeses, but good ole Mozzarella would work!)
  • Salt & Pepper for taste
  • Spices: Mrs. Dash Original, Garlic Salt, Parsley (for garnish)
Prep Time: 25 min 
Cook Time: 30 min
Preheat oven to 350 degrees. 
How to prepare your peppers!
  1. Prepare the brown rice according to directions. Set aside.
  2. Fill a pot with enough water to cover the peppers. Wait for the water to boil. 
  3. While you're waiting for the water to boil, cut the end with the stem off of the pepper. To allow the pepper to sit flat in your glass dish, cut off a bit of the bottom. Scoop out the seeds and middle portion to make a bowl. 
  4. Boil the peppers for about 3 minutes to soften them up.
  5. Brown the ground turkey until there is no longer pink spots. Salt and pepper lightly. Drain the excess water. Set aside.
  6. Poor the rice and meat into a separate bowl. Add desired amount of tomato sauce. Stir to coat the mixture of rice and turkey. 
  7. Add a handful of cheese. Mix.
  8. Season with garlic salt and Mrs. Dash.
  9. Set the green peppers in a glass casserole dish. Pack the peppers with the rice/turkey mixture. Fill until the peppers are full. 
  10. Top the peppers with extra cheese. Garnish with parsley!
  11. Put in the oven and cook for 30 minutes at 350 degrees.
  12. Enjoy stuffing your face with your stuffed peppers! :)
